- Many of our dishes use buckwheat flour and wheat flour, and we have a place to make buckwheat flour by hand inside the restaurant, so even dishes that do not normally use buckwheat flour may contain buckwheat flour, so please be sure to let us know if you have any allergies.
- Fried foods, grilled foods, fish pastes, etc. are cooked after receiving your order, so it may take some time. Also, the order in which they are served may change depending on the cooking procedure.
- We may run out of items depending on the supply situation or if there is a large number of orders on the day, but we appreciate your understanding.

Soba noodles
Explanation of soba noodles
Toichi-soba
- This soba noodle is made with buckwheat flour and 10% wheat flour as a “binder.
- It retains the flavor and taste of 100% buckwheat soba while adding the easy-to-eat taste of 28% buckwheat soba.
- After making 100% buckwheat and 28% buckwheat soba for many years, we have arrived at Juichi Soba, the soba noodle that best makes use of the Kirishita soba from our local Shinanomachi region.
- We hope you will give it a try.
Buckwheat
- Our genuine buckwheat producer, Mr. Ishikawa Hiroyuki, consistently produces high-quality buckwheat and was awarded the Minister of Agriculture, Forestry and Fisheries Award in 2001.
- Mr. Ishikawa produces a type of buckwheat called “Kurohime-Kirishita- Soba” in Shinano-machi, Nagano Prefecture, which has long been known as a producer of high-quality buckwheat.
- We grind the buckwheat delivered to us by Mr. Ishikawa in a stone mill.
Explanation of the soup for eating soba noodles
- Mori-tsuyu soup is a cold soup made with soy sauce, stock (made from bonito flakes, mackerel flakes, kelp, etc.), mirin, sugar, and sake.
- Kake-tsuyu soup is a warm soup made with soy sauce, stock (made from bonito flakes, mackerel flakes, kelp, etc.), mirin, sugar, and sake.
The story of Soba-yu
- Soba-yu is warm water in which soba noodles are boiled.
- The nutrients in buckwheat are water-soluble, so they dissolve into the warm water when boiled. That is why it is said that by drinking soba-yu, you are getting all the nutrients from soba.
- In Chinese medicine, buckwheat is said to have an antipyretic effect, which is why it is thought to be a favorite to eat in midsummer, even though the flavor has diminished.
- Eating cold soba noodles will cool your stomach and intestines, so please drink plenty of soba-yu to warm up your stomach and intestines.

Cold soba noodles
- A large serving of soba costs an additional 330 yen.
- We offer soups separately for customers who order mori soba. Walnut soup (+260 yen), small grated yam soup (+260 yen)
- If a customer who orders soba also eats a rice dish by themselves, the price of all rice dishes will be discounted by 100 yen.
Mori Soba
Mori-soba is cold soba noodles served on a plate and dipped in cold soup.
Hiya-kake-soba
Hiya-kake soba is cold soba served in a bowl and eaten with Mori-tsuyu soup poured over it.
Warm soba noodles
- A large serving of soba costs an extra 330 yen.
- If a customer orders a single serving of soba and eats rice item by himself, 100 yen will be discounted from the price listed for the rice item (excluding rice).
Rice dishes
- Rice dishes will finish as soon as the cooked rice is finished.
- If a customer who orders soba noodles also eats a rice dish by themselves, a 100 yen discount will be applied to the price of all rice dishes.
- We offer half the amount of soba noodles to customers ordering rice dishes.
- All of the rice used is Koshihikari produced in Nagano Prefecture.

Drinks
- Please note that we cannot accept alcohol orders from customers who drive to the store.
- If requested, we will provide salted beans with your beer and buckwheat mash with your sake or shochu.
